I realize sometimes my recipes aren’t totally seasonal. This one for example would be perfect for Autumn. But you know what? I don’t care. I have dried pears and currants and I’m gonna use them no matter what the season is! And they worked out so perfect in these muffins. Delightful, I tell you.

These are perfect for breakfast or a snack. I recommend eating them with Greek yogurt or with my chocolate PB protein pudding. You know you gotta have protein at every meal, right? 😉

Happy Pi Day with a Pear Apple Tart!

I woke up to the realization that today is Pi Day! Although I don’t really eat pie for the mere fact that they are usually loaded with sugar and fat, I wanted to make today a bake day. Today is the day I baked my first pie. Well, technically it’s a tart but that’s close enough. We had a whole bunch of apples and pears so I thought it’d be a smart idea to use those. Gotta keep it fresh and healthy: the fiber in the fruit will keep you full longer and the vitamin C is great for boosting your immune system! I found a pretty cool recipe for a pear tart and after some tweaking with my mom (who is the best at tweaking recipes to make them healthier and yummier. Polish people do that!) we created our own recipe 🙂
