Zucchini Gratin (high protein)

I am growing up. I am making “grown up” food. Well, I wouldn’t consider this a real main dish, although that’s how I like to eat it because I tend to eat smaller meals (but eat them often) rather than have large meals. This would make a lovely side dish or a nice main dish if you’re like me.

It’s slightly cheesy and the nutritional yeast provides a phenomenal nutty flavor. It accents really well with the cumin and turmeric. Plus, these spices are really good for you – they are considered one of the best spices for a person’s health.

Broccoli and Cheese Baked Egg Omelets

I do not own a steamer because I live in a dorm apartment which is tiny pretty small. Once this academic year is over though, and I graduate, mark my words — I WILL own a steamer. So anyway, this was my first time steaming vegetables on my own. Without the use of a steamer. It didn’t turn out bad. It actually worked out perfectly fine. Yay for me!

I started making meal plans for myself and this recipe was on my to-do list for a while and I thought it would be a perfect way to incorporate into my meal plan as a dinner. Yes, I eat eggs for dinner too. Breakfast was a given here. But hey, some studies say we shouldn’t have many carbs after lunch so this is a great dinner option. A lighter option. Just the way I like it.

I enjoyed mine with extra broccoli because apparently I steamed too much haha. Fine with me. Yummy veggie side 🙂

Tuna Kefir Salad (high protein)

Lately, Tuna Kefir Salad has been frequenting my dinner option. I’ve posted about it before in my WIAW and Instagram multiple times but I thought I’d share exactly what it is I put into it. This is a super quick, easy, and filling salad with a big pow of protein!

I’ve been eating a lot more veggies lately and I love it. I’ve been going through two bags of spring mix and spinach in only a couple of days! I feel that when I eat more veggies throughout the day, I feel better and lighter and end up eating less calories than I would otherwise. It’s a win-win!
