Spinach and Egg Strata (high protein)

As you might have noticed my favorite kinds of recipes to do are desserts, snacks, and breakfast. Sweets are a given, even if they aren’t always the easiest thing in the world to make (but oftentimes they are), but breakfast food is just another meal that I simply adore. Although I don’t eat breakfast food at breakfast necessarily. I don’t know, is that weird?

I never feel like spending so much time in the morning to prepare my breakfast. Since I work out on empty stomach right as I wake up, when I’m done and sweaty, I want to be able to eat right now. I don’t have time to make eloquent baked oatmeals and eggs. My post-workout breakfast is usually a delicious protein shake or overnight oats. Sometimes also a parfait, because those are quick to make too.

Truth is, breakfast food isn’t meant to be only eaten in the morning (or at least it isn’t in my world). You cannot tell me you wouldn’t love to eat pancakes or baked eggs at any time of the day, I know I would. And I DO! Don’t try telling me to do otherwise because I won’t listen anyway πŸ˜‰Β This recipe has been saved on my Pinterest board for a long time now. Probably since I started blogging back in March. Finally I have come around to it and made some (small) adaptations. Credit goes to Erin, fully. She rocks.

When I was eating it, I was transported back into childhood. I have no idea why, I’ve never eaten a strata before as far as I can remember. But when I put ketchup on it, some feelings of comfort took over. This warm casserole egg dish was so comforting, so warm and cozy… it would be perfect for a rainy day. Thankfully it’s cloudy today so it worked well. I could actually imagine my future as I was eating it, seeing my future kids enjoying this and asking me to make it for them on a cold rainy day, similarly as I used to ask my grandma or mom to make a dish I liked because it was comforting. It was a really bizzare feeling to be thinking these thoughts because I have never thought about my future that far ahead. Heck, I wasn’t even sure if I want kids! Ah… the power of food.

Broccoli and Cheese Baked Egg Omelets

I do not own a steamer because I live in a dorm apartment which is tiny pretty small. Once this academic year is over though, and I graduate, mark my words — I WILL own a steamer. So anyway, this was my first time steaming vegetables on my own. Without the use of a steamer. It didn’t turn out bad. It actually worked out perfectly fine. Yay for me!

These little baked egg omelets turned out super yummy. And I got really excited when I was sauteeing a whole cup of onions. I felt like a housewife even though I was making this food for myself to enjoy throughout the week. I felt so grown up though!

I started making meal plans for myself and this recipe was on my to-do list for a while and I thought it would be a perfect way to incorporate into my meal plan as a dinner. Yes, I eat eggs for dinner too. Breakfast was a given here. But hey, some studies say we shouldn’t have many carbs after lunch so this is a great dinner option. A lighter option. Just the way I like it.

I enjoyed mine with extra broccoli because apparently I steamed too much haha. Fine with me. Yummy veggie side πŸ™‚

What I Ate Wednesdays #13: Scorcher

Happy 4th of July everyone!

Can you believe it’s July already? Jeez. Is time going by super fast or what? Before I know it, summer is going to be over and winter will be here. Okay, okay, maybe I’m going kinda far here but you know what I mean. Sigh. Anyway, the theme for this month is awesome because it not only includes our eats but also FITNESS! What I Ate Wednesdays #6: Summer is here!

Yes, summer is finally here. I am officially done with my Junior year of college as of last Thursday. I decided to take a whole week off to do nothing – therefore I came to my parents’ house in the suburbs for a few days. So then, finally, my WIAW looks a bit different than usual. And I think that’s a good thing – I needed variety in my life. My daily eats have been looking boring lately. Well, not like this time they are, like, super exciting or fancy or anything… but the whole day looks different from what I’ve been doing lately.

Baked Egg with Veggies

I’m deciding if I should start counting calories again. I’ve been on a calorie counting hiatus for about 2 weeks and it’s been going well but I feel like maybe I need that push to lose those 10 lbs. I don’t like restricting myself, I try not to do that but sometimes maybe we just need a push? I don’t know. It’s also pretty hard to keep track of calories when I started baking and cooking for myself. Figuring out calories for that is killer. Well, for breakfast today I made a different baked egg, one that I actually liked better than my Baked Muffin Egg. Probably because there was no grains in this one. Both taste good but sometimes (okay, usually) I try to keep my carb intake to one to two servings per day. Unless it’s a cheat day. Or if I’m baking.. then it’s a whole different story haha. Whatever, live your life people! πŸ™‚ This is a great breakfast because it’s fast and easy. I prepared everything I needed and popped it in the oven for 20 minutes during which I managed to shower and get dressed after working out. By the time the egg was ready – I was ready, well kinda. But yeah, it’s pretty awesome.

Baked Muffin Egg

I had another kind of a misadventure in the kitchen, my stuff doesn’t always come out the way I expect it to, but gladly the taste is never compromised. I forgot to spray the pan before baking though and I spent a good 20 minutes scraping it afterwards. Lovely. Anyways, sometimes (okay, often) I feel like eating breakfast food later in the day. Sometimes twice in a day. I’ve even had a breakfast day once, where all I ate was breakfast food. Needless to say, I like breakfast food. It’s usually fast and easy which I like. I wanted to make this baked egg today for lunch and the result tasted just as good as I expected it to. It’s my first time baking eggs (I usually just fry them) but I am really enjoying my learning in the kitchen and always look forward to finding new cooking techniques. I learn on my own mistakes too and I’m sure next time I won’t make the mistake of not spraying the pan before cooking πŸ™‚ Typical newbie error.

Onion and Cheese Egg White Omelette (Low Cal)

Today, I decided to share with you what I eat for breakfast almost every day. I go on and off calorie counting and I therefore want to know the exact amount of calories in each meal. Thankfully, the way I make this omelette makes my calorie counting very easy. Everything is pretty precise. It all depends on what ingredients you use, of course.
